Baked Parmesan Zucchini Sticks

I’ve been dying ya’ll. I’ve been dying to make this recipe since I saw the recipe circulating around Pinterest last summer. Yes, they’re to die for. That’s saying a lot coming from a recovering junk-food junkie. I didn’t eat vegetables (besides corn LOL) until I was 18—and at that point it was only a simple salad I could choke down…as long as it was doused in salad dressing. Apparently, I’ve made a change for the better and actually enjoy (such a strong word) quite a few veggies. These might not be the healthiest version of a vegetable you could eat but hey…we’re on the right track, right?

Baked Parmesan Zucchini Sticks

  • 1 medium Zucchini
  • ½ cup breadcrumbs
  • ¼ cup grated Parmesan cheese
  • 1 egg
  • salt and pepper
  • cayenne
  • Ranch dressing or marinara (optional)

DIRECTIONS

  1. Preheat oven to 425 F degrees.

  3. Cut your zucchini in half, then half again lengthwise. Cut those quarters into halves again. (should end up with 8 pcs)
  4. Beat the egg, salt and pepper & cayenne to taste, in a shallow bowl. In another bowl combine the breadcrumbs with the Parmesan cheese. Season with salt and pepper.

  6. Dip each zucchini stick in the egg wash, and then roll through the breadcrumb mixture. I really went to town on the breadcrumbs…I smothered those puppies.

  8. Bake for 25 minutes or until golden brown.

  10. Serve with Ranch dressing or Marinara sauce.
